Boil water, and add Noodles with a spoon full of oil. Once the noodles are done, drain and keep aside.
Heat Oil in a shallow pan under medium flame. Add crushed Garlic, Ginger, Onions, Diced Capsicum and Tomatoes, sauté for a while until the onions turn golden brown. Once the veggies are almost cooked, lets add the spices. Add Chilly powder, Tomato sauce, Coriander leaves and salt let your dish cook for some time, then mix in the previously boiled noodles.
You can garnish the spicy tomato noodles with Cheese. You can serve this dish with a tomato sauce or spicy chutney, or as an accompaniment with Fish or meat dishes.
